What happens during a wedding-date consultation?

It usually takes about 40 minutes to an hour, depending on the couple's questions. The couple should provide me with their birth dates, times of birth, parents' zodiac signs, dialect groups and when they want to hold their wedding. From these details, I derive their ba zi, which is crucial in selecting an auspicious wedding date. Like our DNA, the ba zi is unique to each individual. I will then use the information to pick the dates and present them in a report.

Can I just pick out a date from a bookstore-bought Chinese almanac?

Dates from the Chinese almanac are "generic" and not ideal for wedding-date selection. Since everyone has a unique ba zi, an auspicious date for one person does not mean it's auspicious for another. A good date in the Chinese almanac can still be inauspicious if it's incompatible with the couple's ba zi.

What happens if a couple's ba zi reveals that their marriage won't work out?

I drop hints but won't say too much, unless the couple is open-minded. I would suggest that they come in for a full ba zi consultation, so that I can advise them on potential problems, as well as things they can do to prevent anything bad from happening.
